Ferrofluid
The coolest substance ever. Apart from Superfluid helium, which is also pretty awesome. Sulfur hexafluoride is definitely an interesting gas, Miraculin makes your taste buds go weird, and the Leidenfrost Effect shows some interesting properties of water, like Lichtenberg scars do for lightning.
