I know you can find tons of online material on game design. Still I want to share this website by the Electronic Visualization Laboratory at the University of Illinois.
It is not aimed at GM but introduces general aspects of game design and deals with how you organize groups of students in teams and set up deadlines.
The course schedule includes all the Powerpoint presentations on topics like "Introduction to Game Design", "Game AI", "Software Structure of a Video Game",...
I really like the "One Page Project Management Sheet" they use in that course (see January 27 in the schedule).

Of course I don't promote stealing or unauthorized reproduction of this material. However, since the material is publicly accessable I think it is a great resource and can give you an idea on how to structure an advanced course in game design (and which topics to include).
PS: On the bottom of the course schedule page you can download the games the students came up with.
