What does "image_single" do?
My guess is it's a combination of image_index=number; && image_speed=0;, but i'm not exactly sure.

That's exactly correct actually. It sets the image_index to n and keeps it there until you change or redefine image_speed

Its a legacy function from GM6 (!) and will be removed so I wouldn't use it if I were you!

Will there be a list released of removed functions? It would be extremely helpful I'm sure.

Here is a thread about some of the functions that have been removed already

Just open the manual! In the reference section there is a part labelled "Obsolete Functions", and while not 100% (there are still a couple of things to add, like image_single) it's nearly there. We provided this due to the large number of people trying to import older games, so you can at least see what a function did and replace/remove it.
